Bacon, Salted (Streaked Meat)

This is labeled bacon in compliance with labeling regulations but it is what old timers call Midlin Meat or Streaked Meat. It is salted and dry aged pork belly, the same cut used for bacon. Salt and rind are still intact in packaging so it is recommended to wash the meat in warm water just prior to cooking. Excellent seasoning meat for pinto beans or use for red eye gravy. Limited supply as we utilize this cut fresh for smoking during grilling season.
